Whether that is tending to the organic olive groves, or spending time in the Carriage House crafting our vinegar, or taking care of the French Redbro chickens that pasture under the olive trees, it is our unbroken commitment to small-scale farming.
ABOUT THE TASTE
Harvested Nov. 10 to Dec. 3 2009, KATZ Rock Hill Ranch has a very low .17 free fatty acid. Hand harvested and bottled unfiltered, this year’s oil shows off its aroma of its grassy and floral overtones with a rich, lush mouth feel ending with a pleasantly pungent finish that announces its freshness. Katz Rock Hill Ranch compliments simple fish, poultry and vegetable dishes, livens up a risotto with wild mushrooms or polenta with braised greens, or makes a bold fruity dressing for arugula or spinach salads...be inspired!
ABOUT THE PRODUCT
All of the fruit in this bottling of olive oil comes from our organically farmed ranch. The twenty acres sit on the southern tip of Suisun Valley, California, where breezes blow in from the west (Suisun means "west wind") creating a distinctive microclimate. The surrounding hills are full of compacted volcanic ash, called tuffo in Italian, creating a loamy soil…an ideal mix for growing olive trees. These are the same soil conditions that the Tuscans claim are responsible for making it the "best" region for growing olives...a claim we can now make for the Suisun Valley.
KATZ Rock Hill Ranch Organic Extra Virgin California Olive Oil contains the following olive varieties:
Taggiasca and Casaliva... 80% of the blend, these varieties are native to the Ligurian and Lombardy regions of Italy respectively. Both are known for their soft and persistent fruitiness with sweet overtones producing a lush mouth feel.
Allegra... 10% of the blend, a rare variety from Italy that is a low-vigor tree (grows slowly) and produces beautiful “clusters” of fruit that yield lush, full-bodied oil with very round flavors. We are one of the few growers of this variety in the U.S.
Leccino... 10% of the blend, this Tuscan cultivar gives the oil a green hue with a background of sweet spice and a lush fruitiness.
