We use only the O’Henry peach variety for our Branches Peachpreserves. It is late ripening, with a two-week window period around August 1st. We prefer this variety because the fruit is firm with shades of red when ripe, and it has a pleasant balance of sweetness with just a touch of acidity.

Making our fruit preserves in the artisanal manner for the past ten years has been a labor of love. Articles in The Atlantic, Saveur, Gourmet, Fine Cooking and The New York Times have inspired us to increase our production. Yet each batch of fruit still arrives from the farms during season to be skillfully cut by hand, cooked down in small batches in open kettles and preserved with the smallest amount of sugar and fresh lemon juice needed to set (no pectin or preservatives are used).
